Pork Roast – Old Fashion Way

I bought a Dutch oven from Sam’s today.  I’m excited about opening the door to some different recipes.  My first step was to search the Internet to find a recipe.  I had a pork roast in the refrigerator and I was ready to do something different with it.

A quick search turned up the recipe I was going to use.  Seemed simple enough which is very important since I have the attention span of a gnat and lose my place in recipes all the time.  I found it at Food.com.  Here is a link to the recipe:  http://www.food.com/recipe/pork-roast-old-fashion-way-use-cast-iron-dutch-oven-44278.  It had 49 reviews and received a tick under 5 stars.  I did change the recipe a tick.  I omitted the Kitchen Bouquet because I didn’t have any.    This willingness to omit ingredients may be why my recipes sometimes have issues.  On the flip side, I’ve learned there is a lot of play in recipes and omitting an ingredient here or there is usually not a problem.

This meal was simple and received  thumbs up from all the kids.  I served it with baked potatoes and corn.  I was supposed to make gravy but the crowd was hungry so we skipped the gravy for tonight…giving me leftovers for tomorrow night.

Tomorrow,  I will take the unused drippings and make gravy.  I’ll add the left over meat to the gravy and serve it over rice. I LOVE leftovers.  I am truly amazed by people who don’t do leftovers.  Of course most people I know who don’t do leftovers are truly amazed by a family with 5 kids.
