Crock Pot Loaded Potato Soup

My kids are not going to be happy.  I’m winging dinner tonight.  I am basing it on a recipe I made before but just can’t quite put my hands on.

Here’s what I did:

Pealed and sliced a tick under 10 lbs of potatoes (there’s a bunch of us so we do volume)

  • 1 large onion – sliced and diced
  • 1 box of chicken broth – 32 ounces.  I probably will need more.

I put them all in my crock pot and turned it on high.  In 1 hour, I will turn it down to low.  We had a power outage so I am behind in putting this together.

Later, I will add:

  • 1 cup or so of grated cheddar cheese
  • 4 or 5 slices of bacon
  • 3 or 4 cups of skim milk.

I am going to cook it around 5 hours or until it seems done.  Hopefully, 5 hours or my kids will be cranky.   We don’t do hunger well.

Well with a little work, it turned out great.  I would add more cheese and more bacon.  For the amount I made, you could barely taste it.

After 5 hours, the potatoes were still hard and I had hungry people.  I think I overloaded my crock pot.   To solve the problem, I just moved it from the crock pot to the stove.  After cooking it on a medium heat for about 30 minutes, it was ready.  The soup tasted great.

The family gave it 1 and 1/2 thumbs, 2 being the best.  It would have been two thumbs up but they wanted more cheese and bacon.  We solved the cheese problem by grating a little more and just adding it when you dished it up.  Bacon could have been added too, but I didn’t have any.
